POTATO and BACON PIE

POTATO and BACON PIE

1 spray cooking spray
4 large potatoes, red, white, peeled, and mashed or grated
½ medium apple, peeled, cored and grated (use Granny Smith)
8 slices, cooked crisp turkey bacon, diced
½ cup fat-free evaporated milk
3 tbsp. Parmesan cheese
1/8 tsp. ground nutmeg
1/8 tsp. table salt, or to taste
1/8 tsp. pepper, or to taste

Preheat oven to 350^. Coat a 9-inch pie dish with cooking spray.

Stir together all ingredients. Spread in pie dish and smooth the top.
Bake until nicely browned on top, about 35 to 40 minutes. Cool for 5 minutes before cutting into eight wedges.
