V8 SPANISH-STYLE RICE


1 tbsp. vegetable oil
1 cup uncooked regular long-grain white rice
4 cups V8 100% vegetable juice
1 tsp. dried basil leaves, crushed
¼ tsp. garlic powder
2 cups frozen mixed vegetables

Heat the oil in a 10-inch skillet over medium heat. Add the rice and cook for 30 seconds, stirring constantly.

Add the vegetable juice, basil, and garlic powder and heat to a boil. Reduce the heat to low. Cover and cook for 15 minutes.

Add the vegetables to the skillet. Cover and cook for 10 minutes or until the rice and vegetables are tender and most of the liquid is absorbed.

Yield: 4 servings.
