POTATO CHIP COOKIES IV
This recipe uses "lite" potato chips which makes
this version of potato chip cookies much less oily."
1 cup vegetable oil
1 cup confectioner’s sugar
1-1/2 cups all-purpose flour
1 tsp. vanilla extract
1-1/2 cups crushed light potato chips
1/3 cup confectioner’s sugar for decoration
Preheat oven to 350^.
Cream the shortening and the sugar together until light. Stir in vanilla and flour then carefully fold in potato chips.
Drop by spoonfuls onto an ungreased baking sheet. Bake at 350^ for 15 to 18 minutes or until just golden brown, do not overbake. Sprinkle warm cookies with confectioner’s sugar and remove to wire rack to cool.
Yield: 60 servings.
