CHICKEN with BROCCOLI and GARLIC SAUCE
CORE PLAN

1 tsp. olive oil
½-tsp. minced garlic
4-oz. boneless, skinless, chicken breast cut into 1-inch pieces
Pinch dried thyme
Salt and pepper
1 cup frozen broccoli florets
½-cup chicken broth
1 cup cooked brown rice

Heat oil in a large skillet over medium high heat; add garlic, sauté one minute. Season chicken with thyme, salt and pepper; add to skillet. Cook stirring frequently, until browned, about 3 minutes. Add broccoli, cook one minute. Add broth, cover and cook 5 minutes. Serve over rice.
Note: To serve 4, increase quantities, to 4 tsp. olive oil, 2 tsp. garlic, 1 lb. chicken breast, 1 tsp. dried thyme, 4 cups frozen broccoli, 2 cups broth, 4 cups rice.
