JOAN’S CHICKEN CASSEROLE
3 lbs. boneless chicken breast, cooked
1 cup chopped celery
1 can watercestnuts
2 tbsp. finely minced onion
1 (10-1/2-oz.) cream of chicken soup
1 cup reduced fat mayonnaise
2 Tbsp. lemon juice
8-oz. sour cream
¼ tsp. salt
1/8 tsp. Pepper
crushed potato chips
paprika
Cut cooked chicken into bite-size pieced.
Mix chicken with remaining ingredients, except potato chips and paprika
Pour chicken mixture into greased 2-qt. casserole.
Top with potato chips and sprinkle with paprika
Bake, uncovered, at 350^ for about 30-40 minutes.
Yield: Serves 6-8.
