FLUFFY POTATO CASSEROLE
2 cups mashed potatoes
1 (8-oz.) package cream cheese, softened
1 onion, chopped
2 eggs, beaten
1 tbsp. all-purpose flour
¼ tsp. salt
1/8 tsp. ground black pepper
½ (6-oz.) can french fried onions
Preheat oven to 300 degrees. Grease a 1-1/2 quart casserole dish.
Combine mashed potatoes, cream cheese, onions, eggs, flour, salt and pepper in an electric mixer. Beat 2-3 minutes at medium speed. Pour into prepared casserole dish.
Spread fried onions, evenly over the top.
Bake uncovered for 30-35 minutes.
Yield: 2 servings.
