PINTO BEAN SOUP

PINTO BEAN SOUP

2 cups pinto beans
½ cup chopped onions
2-1/2 cups chicken stock
½ cup tomato juice
3 Tbsp. butter
2 minced garlic cloves
Sour cream

Cook onions in butter. Add the pinto beans, chicken stock, and minced garlic and mix well. Pour into saucepan and simmer for 10 minutes. Add the tomato juice and cook until heated through.

Serve with a spoonful of sour cream on top.
