SUNSHINE BAKED EGGS
1 lb. sliced bacon
14 eggs
1-1/3 cup cottage cheese
1 can (8-oz.) crushed pineapple, drained
1 tsp. vanilla extract
Chopped fresh parsley, optional
In a skillet, cook bacon until crisp; drain and discard all but 2 tablespoons drippings. Crumble bacon. In a large bowl, lightly beat eggs; add bacon and drippings, cottage cheese, pineapple and vanilla. Pour into a greases 11-x-7-x-2-inch baking dish. Bake, uncovered, at 350^ for 40-45 minutes or until a knife inserted near center comes out clean. Let stand for 5 minutes before serving. If desired, garnish with parsley.
Yield: 8 servings.
