SIMPLE SAUSAGE LASAGNA
1 lb. bulk pork sausage
1 jar (26-oz) spaghetti sauce
½ cup water
2 eggs, beaten
1 carton (24-oz) cottage cheese
1/3 cup grated Parmesan cheese
1 to 2 tbsp. dried parsley flakes
½ tsp. each, garlic powder, pepper, dried oregano and basil
9 uncooked lasagna noodles
3 cups (12-oz) shredded, part-skim mozzarella cheese
In a large skillet, cook sausage over medium heat until no longer pink; drain. Stir in the spaghetti sauce and water. Simmer, uncovered, for 10 minutes. Meanwhile in a large bowl, combine the eggs, cottage cheese, Parmesan cheese, parsley and seasoning.
Spread ½ cup meat sauce into a greased 9-x-13-inch baking dish. Layer with 3 noodles and 1/3 of the cheese mixture, meat sauce and mozzarella cheese. Repeat layers twice.
Cover and bake at 375^ for 45 minutes. Uncover; bake 10 minutes longer or until noodles are tender. Let stand 15 minutes before serving.
Yield: 12 servings.
