ROASTED POTATOES AND PEPPERS

ROASTED POTATOES AND PEPPERS

2 lbs. red small potatoes, quartered
1 medium green pepper, coarsely chopped
1 medium sweet red pepper, coarsely chopped
1 medium red onion, coarsely chopped
½ cup creamy salad dressing

In a 15-x-10-x-1-inch baking pan coated with cooking spray, combine potatoes, peppers and onions. Drizzle with dressing and toss to coat.

Bake at 400^ for 40-45 minutes or until potatoes are tender, stirring occasionally.

Yield: 8 servings.
