PEPPERED BACON & TOMATO LINGUINE

PEPPERED BACON & TOMATO LINGUINE
"Very easy to make and is delicious"

½ lb. peppered bacon, diced
2 Tbsp. chopped green onion
2 Tbsp. minced garlic
1 (14.5-oz) can diced tomatoes
1 tsp. dried basil
1 tsp. salt
ground pepper to taste
1 (16-oz) package linguine pasta
3 Tbsp. Parmesan cheese

Place bacon in large deep skillet. Cook over medium high heat until evenly browned. Drain, reserving drippings, and set aside.

Sauté green onions and garlic in bacon drippings over medium heat for 1 minute. Stir in tomatoes, basil, salt and pepper; simmer 5 minutes.

Meanwhile, bring a large pot of lightly salted water to a boil. Add pasta and cook for 8-to 10 minutes or until al dente, drain.

Toss hot pasta with sauce and sprinkle with Parmesan cheese.

Yield: 4 servings.
