ORANGE OATMEAL MUFFINS

1-1/2 cups buttermilk baking mix
¾ cup uncooked old fashion oats
½ cup 2% reduced-fat milk
¼ cup sugar
1 large egg, beaten
2 Tbsp. orange juice
½ Tbsp. orange zest
1-1/4 tsp. sugar
Preheat oven to 400^. Line a muffin tin with 10 paper muffin liners.
Combine all ingredients, except 1-1/4 tsp. of sugar. In a large bowl; stir until moistened.
Spoon ¼ cup batter into each prepared muffin cup. Sprinkle each with 1/8 tsp. of sugar and bake until golden, about 15 minutes.
