MINESTRONE SOUP
1 large onion, chopped
2 large carrots, chopped
2 ribs celery, chopped
1 medium zucchini, chopped
1 cup cabbage, chopped
1 cup Italian stewed tomatoes
1 can green peas
1 can kidney beans
1 can chicken broth
4 beef bouillon cubes
1 tsp dried thyme
1 tsp dried oregano
1 tsp dried basil
1 tbsp dried parsley
1 clove garlic, chopped
1 bay leaf
1 lb Italian sausage, browned, drained
1½ cups noodles or other small pasta, cooked and drained according to package.
Place all ingredients except pasta in crock pot. Add about 2 cups. Cook on LOW 6-8 hours. Add pasta 20 minutes prior to serving. Cook on LOW until pasta is desired texture. Serve with fresh grated Parmesan or cheese on top.
