MAN PLEASIN’ JAMBALAYA

MAN PLEASIN’ JAMBALAYA
This is very filling and is great heated up the next day.

8 skinless, boneless chicken breast halves, diced
6 cups chicken broth
3 cups long grain white rice
1 lb. Smoked sausage, sliced
¼ cup vegetable oil
1 bell pepper, seeded and chopped
1 small onion, finely chopped
4 carrots, thinly sliced
2 stalks celery, thinly sliced
1 (8-oz) can mushroom pieces, drained
¼ tsp. cayenne pepper, or to taste
salt and pepper to taste

Heat oil in large soup pot over medium heat. Add onion and cook, stirring frequently until soft. Add the chicken and continue cooking and stirring so that it does not stick. When the chicken is browned, add the carrots, celery, mushrooms, bell pepper and sausage.

Pour in the broth, and bring to a boil. Add the rice, and season with cayenne, salt and pepper. Cover and cook over low heat for 20 minutes, until rice is tender and the broth has been absorbed.

Yield: 12 servings.
