CARROT & RAISIN SALAD

CARROT & RAISIN SALAD

5 carrots, grated
3 stalks celery, chopped
½ cup walnuts, chopped
½ cup raisins
May add ½ cup crushed pineapple if desired.

DRESSING: 1 cup mayo or salad dressing
2 tbsp. sugar
¼ cup milk
Mix dressing ingredients until smooth. Add to other items. Chill

Serves 6-8

CARROT & RAISIN SALAD
3 carrots, shredded
2 apples, peeled, cored and diced
2 stalks celery, diced
½ cup raisins
¼ tsp. salt
1 tsp. lemon juice
¼ cup mayonnaise
¼ cup sour cream
¼ cup walnuts, coarsely chopped

Mix all ingredients, tossing with large fork. Chill and serve on bed of lettuce.

Serves: 4











CARROT-RAISIN SALAD

2 cups shredded raw carrots
½ cup seedless raisins
¼ cup mayonnaise
¼ cup low-fat yogurt or 2 tbsp. milk
2 tbsp. fresh lemon juice
1 tbsp. honey
1/8 tsp. salt
Scrape carrots and shred to make 2 cups. Combine with raisins. Mix together mayonnaise, yogurt, lemon juice, salt and honey. Pour over salad and mix thoroughly.
Yield: 5-6 servings

CARROT AND RAISIN SALAD #3
4 cups grated or shredded, pared carrots
1 cup raisins
½ cup mayonnaise or salad dressing
1 tsp. lemon juice
2 tbsp. light cream
Lettuce
½ cup toasted, blanched almonds
Combine carrots and raisins. Blend mayonnaise or salad dressing, lemon juice, and cream; mix with carrots and raisins. Spoon into lettuce cups or over shredded lettuce. Sprinkle with almonds.

Makes 6 servings.
