ORZO DELICIOSO
2 Tbsp. butter
¼ cup olive oil
1 large white onion, chopped
2 fresh jalapeno peppers, diced
1 red bell pepper, chopped
1 tureen bell pepper, chopped
1 yellow bell pepper, chopped
½ cup white wine
1 large tomato, chopped
1 (10-oz.) can corn, drained
2 Tbsp. minced garlic
4 fresh mushrooms, sliced
1 (16-oz.) package dried orzo pasta
Heat butter and oil in a large skillet over medium heat. Stir in onion, jalapeno, and red, green and yellow bell peppers. Pour in white wine; cook 5 minutes. Stir in tomato, corn, garlic, and mushrooms; cook 10 minutes.
Meanwhile, cook orzo according to package directions. Drain, and toss orzo with sautéed vegetables.
Yield: 8 servings.
