COLESLAW with LIME & CILANTRO
Coleslaw:
16-oz. coleslaw mix
½ cup lightly packed cilantro leaves, coarsely chopped
½ cup sweet red pepper, chopped
Dressing:
¼ cup canola oil
3 tablespoons fresh lime juice
¾ teaspoon ground cumin
½ teaspoon salt
Freshly ground pepper
Garnish:
Sliced almonds, if desired
Directions
In a serving bowl, combine coleslaw mix, cilantro and red pepper.
In a separate small bowl, blend together oil, lime juice, cumin, salt and pepper. Pour dressing mixture over coleslaw mixture.
Cover and chill 1 to 2 hours before serving.
Garnish with sliced almonds, if desired.
Yield: 4 servings.
