SPICY PORK STEW

SPICY PORK STEW


2 lbs. lean pork
2 Tbsp. vegetable oil
1 large onion, chopped
2 cloves garlic, minced
6-8 New Mexico green chiles, roasted and peeled
seeds and stems removed, chopped
1 large potato, peeled and diced
2 tomatoes, peeled and chopped
3 cups water


Brown pork in the oil; add onion and garlic; sauté for about 3 minutes. Place the pork, onion and garlic and remaining ingredients in a Dutch oven or crock-pot and simmer for 1-1/2 to 2 hours or until meat is very tender.

Yield: 4 servings.
