CROCKPOT PEANUT CHICKEN

CROCKPOT PEANUT CHICKEN


3 lbs. boneless, skinless chicken breast
½ cup peanut butter
¼ cup orange juice
3 Tbsp. low sodium soy sauce
1 Tbsp. sugar
½ tsp. ground ginger
1/8 tsp. pepper
¼ tsp. garlic powder
¼ cup chicken stock


Combine all ingredients in a 4-quart crockpot; mix well. Cover and cook on LOW for 6-8 hours or until chicken is tender and thoroughly cooked. Serve with hot cooked rice or noodles.


Yield: 6 servings.
