QUICK SPANISH RICE
1 onion, diced
3 cloves garlic, minced
1 cup green pepper, chopped
2-tbsp. olive oil;
3 cups cooked rice
2 cups tomato sauce
1 tsp. salt
1 tsp. paprika
½ tsp. freshly ground black pepper
1 dash cayenne pepper
In a large skillet, sauté onion and bell pepper in oil over low heat until onion is translucent. Add rice and sauté briefly. Stir in tomato sauce and spices. Heat through and serve.
Yield: 6 servings.
