TANGY LEMON PIE

TANGY LEMON PIE
This pie is made with sugar-free gelatin and lemonade
mix. This light pie is absolutely delicious.

1 package (3-oz.) sugar-free lemon gelatin
1 package (8-oz.) reduced-fat cream cheese
1-3/4 tsp. lemonade drink mix*
1 reduced-fat graham cracker crust (8-in.)
6 tbsp. reduced fat whipped topping

Prepare gelatin according to package directions. Refrigerate until almost set. Transfer to a blender or food processor. Add the cream cheese and lemonade mix; cover and process until smooth. Pour into the crust. Refrigerate overnight. Serve with whipped topping.

Yield: 6 servings.
*This recipe was tested with Crystal Light drink mix.
