SMOKED SAUSAGE JAMBALAYA

SMOKED SAUSAGE JAMBALAYA

1-lb. smoked sausage, cut into 1-inch pieces
1-lb. ground beef
1 medium-sized green pepper, chopped
½ cup chopped green onion
5 cloves garlic, minced
1 (28-oz.) can tomatoes, undrained
½ tsp. salt
¼ tsp. pepper
1 cup long grain rice
1-1/2-cups water

Cook sausage in Dutch oven until browned; remove sausage. Add ground beef, green pepper, green onions and garlic to Dutch oven; cook until beef is browned. Drain. Add tomatoes, salt, pepper, and sausage. Cover and simmer for about 10 minutes.

Add rice and water to meat mixture; bring to a boil, then turn heat down to simmer; cover and cook 25 minutes or until rice is tender.

You can brown the rice in oil before adding. It gives it more "Cajun" taste.

Yield: 6 servings.
