SAUSAGE BREAKFAST PIE
"To make a crowd-size pie: Double all ingredients. Spray a 9 x 13-inch baking dish with cooking spray. Cook sausage mixture in a 12-inch skillet. Stir Bisquick mixture in a large bowl. Bake 35-40 minutes".
1 package (12-oz) bulk pork sausage
1 small bell pepper, chopped (1/2 cup)
1 medium onion, chopped (1/2-cup)
1-1/2 cups frozen hash brown potatoes
1 cup shredded Cheddar cheese (4-oz)
½ cup Original Bisquick mix
1 cup milk
1/8 tsp. pepper
2 eggs
Heat oven to 400^. Spray pie plate, 9 x 1-1/4 inches with cooking spray. Cook sausage, bell pepper and onion in 10-inch skillet over medium heat 8 to 10 minutes, stirring occasionally, until sausage is no longer pink; drain. Mix sausage mixture, potatoes and ½ cup cheese. Spread in pie plate.
Stir remaining ingredients in medium bowl with wire whisk or fork until blended. Pour into pie plate.
Bake 30 to 35 minutes or until knife inserted in center comes out clean. Sprinkle with remaining ½ cup cheese. Bake 1 to 2 minutes longer or just until cheese is melted. Let stand 5 minutes before serving.
Yield: 6 servings.
