CRABMEAT STUFFED MUSHROOMS
12 to 14 large fresh mushrooms
2 tbsp. sliced green onion
1 tbsp. butter or margarine
3-tbsp. fresh bread crumbs
1 pkg. (3-oz) cream cheese, softened
1 pkg. (6-oz) frozen crabmeat, thawed, drained and flaked
Salt and pepper, optional
Remove mushroom stems; chop enough stems to measure 1/3 cup. Cook and stir chopped stems and onions in 1 tbsp. butter until tender. Stir in breadcrumbs.
Add mushroom mixture to cream cheese in a medium bowl; mix until well blended. Gently stir in crabmeat; season to taste with salt and pepper.
Brush mushroom caps with remaining 2-tbsp. butter, melted. Fill with cream cheese mixture; place in shallow baking dish.
Bake at 350^ for 18 to 20 minutes or until heated through.
