BRATWURST STEWED WITH SAUERKRAUT

BRATWURST STEWED WITH SAUERKRAUT

2 tbsp. olive oil
2 lbs. bratwurst links
2 medium yellow onions, chopped
2 garlic cloves, minced
3 cups chicken stock
1 tbsp. paprika
1 tbsp. caraway seeds
4 cups sauerkraut, drained
2 tbsp. fresh dill, chopped
1 baguette, sliced into 1-inch thick slices

In a large pan heat oil over medium-high heat, until just beginning to smoke. Brown the sausage in the oil, then reduce heat to medium. Add onion and garlic and sauté until lightly caramelized, about 10 minutes. Add stock, paprika, caraway seeds and sauerkraut and simmer for 40 minutes. . Remove from the heat and stir in the dill. Serve with the warm German Potato Salad and the baguette slices.

Yield: 8 to 10 servings.
