CAFETERIA STYLE CHILI
1 lb. lean ground beef
1 medium-sized onions, chopped
2 (15-oz.) kidney beans, undrained
1 (28-oz.) can diced tomatoes, undrained
1 (4-oz.) can chopped green chills
2 tbsp. chili powder
1 tsp. ground cumin
½ tsp. salt
½ tsp. black pepper
In a soup pot, brown ground beef and onion over medium-high heat for 5 to 7 minutes.
Add remaining ingredients, reduce heat to medium-low, and cook for 1 hour, or until chili is thickened, stirring occasionally.
Yield: 5 servings.
