DOUBLE MANGO-SHRIMP SALAD
3 Tbsp. picante sauce or salsa
1 Tbsp. mango or peach chutney
1 Tbsp. Dijon mustard
1 Tbsp. Lime juice
4 cups torn Boston or red leaf lettuce
6-oz. medium or large COOKED shrimp, peeled and deveined
½ cup diced ripe avocado
½ cup ripe mango or papaya, diced
1/3-cup red or yellow bell pepper strips
2 Tbsp. cilantro, chopped (optional)
Combine the picante sauce, chutney, mustard and lime juice in a small bowl; mix well. Combine lettuce, shrimp, avocado, mango, pepper strips and chutney mixture; Toss well and transfer to serving plates
